I've heard a rumour that the owner(s) of Mayan Grill in Cambridge have
finally opened a new place in Waterloo. I believe the new name is Las
Margaritas. It's supposed to be a bit more "upscale" in food
selection.

Can anyone confirm this or has anyone eaten there yet?

My wife and I stuck our heads in on Saturday evening, around 8:30.
It's located in the Waterloo Hotel, where The Rude Native used to be
years ago. The place was packed. We spoke with one of the owners
(maybe, somebody who seemed to be in charge) who said they just opened
the night before (last Friday, the 25th?) and actually ran out of
food. He said something about bringing in cooks/chefs from Toronto.
I can't speak to the food, but on our way out, we spoke with a few
folks on a smoke break who raved about the Margaritas.

I do not know if these are the Mayan Grill owners or not.

I've eaten at Margarita's. (Website to come: http://dosmargaritas.com.)
This is the first I've heard if it being from the same person/people
as Mayan Grill. I'd be a bit skeptical of that, particularly the
"upscale" part, given little details like the quality of the tortilla
chips and the flavour of the mole. (Also only saw one woman -- a
server -- who definitely wasn't the owner of Mayan Grill.)

Granted, we've only had the lunch menu so far, which is fairly
limited. The lime margaritas were tasty enough, though I'm not a huge
fan of "X stuffed only with meat" in any cuisine, which is basically
what the chicken enchiladas and a number of other dishes were. Better
than Casa Salsa, certainly, but I'll have to try the place for dinner.

Our party all agreed that the food was a bit bland (though I expect
that from our heat junkie), as did others I've talked to who have gone
(including one who spends considerable time down south near the
border, and is, in his own worlds "a bit fussy").

Seemed like they had a helluva first week. It was full and they didn't
have a computer system yet for tables/orders or for payment. Service
was fairly smooth for us, though, if not terribly fast, but they were
very open and apologetic about it and clearly doing their best to keep
up.
